The Green Island Foundation, a non-governmental organization with a decade-long history of conservation success in the Seychelles, has a permanent outpost on the island that oversees several different programs. The movement of some of Seychelles’ rare endemic birds has been one of Denis Island’s most important environmental achievements, paving the way for some of these species to improve their position on the IUCN Global Threatened Birds list.

Everytime Hawksbil turtle and the Green turtle lay eggs on Denis Island’s protected shoreline The Green Island Foundation monitor and mark their spot. This provides valuable information to help with the protection of this particular species. The Green Islands Foundation conducts extensive surveys of the ecosystem around the island – essential breeding sites as well as feeding stations for fish and green turtles – and the government of Seychelle has given the waters around Denis Island a protected status which has helped to preserve the island’s marine environment just like nature. The restoration of indigenous forest environments, breeding of giant turtles as well as a continuous seabird colony are just some of the many other conservation projects currently operated at Denis Island.

Sustainability:
Aside from mentioned conservation programs, the primary management of the island’s main focus is sustainability, how to reduce waste and maximize their environmental footprint best way possible.

The self-catering timber factory and the carpentry workshop, provide all wooden floors for the hotel, as well as most of the furnitures on site. The innovative use of coconut palms for cattle feed has increased milk production for the entire island.

With a deeply rooted knowledge of the local ecosystem, the aim is to use local materials and methods whenever possible, which significantly reduces the hotel’s carbon footprint.

Cultivation and Food:
Enjoying elegant food that tastes as good as it looks is a human impulse. Knowing that what you eat has been cared for, cultivated and harvested within a few hundred meters from where you sit, is a great feeling.

The island’s farm offers the international culinary team with an impressive palette to work with, but also serves as a wonderful highlight for you to explore. From milk, yogurt and cheese from the hotel’s cattle to fresh pork and all kinds of bird, fish as well as a wonderful selection of fruits and vegetables, Denis Island gives new meaning to “farm fresh”.

The purpose of the kitchen is to use fresh ingredients found at the island as far as possible. Breakfasts including fresh eggs and dairy products, lunch buffet with an authentic international cuisine. The evening gives rise to a more sophisticated approach, with intricate five-course menus showing off the chefs’ creativity and skill, an experience enjoyed in the restaurant itself or on the beach under a sky of stars.
